Customise post-sale ticket title

We would like the ability to configure the default ticket title for post-sale tickets. Ideally with the ability to use variables.

Currently, the title title is just the quote name which doesn't necessarily provide enough context. If this could be customised with variables we would like the format to be something like this:

- New Order -
12345 - New Order - Acme Corporation
