Individual Item variable quantities

Some items can be variable quantity, some must not be changed. Currently we must set all items to be variable quantity, or none of them to be. It would be nice to be able to individually set items as variable quantity, with a min and max that they can be set to by the customer. While leaving other items locked at their current quantity.
